The dish
Corn masa, hand-folded into a corn husk around the filling, then steamed until the masa is soft and pulls away from the husk. Choose chicken or beans. The husk gets unwrapped at the table.

Why we make it this way
Hand-folded tamales steam evenly: the masa relaxes inside the husk, which is why ours come apart properly when you unwrap them. Machine-folded tamales stay tight against the husk in a way they shouldn’t.
