Tacazo de Birria

The dish

The Tacazo is what happens when the Plato de Birria meets a quesadilla and asks “why pick one?” A handmade tortilla, cheese melted to the edge, shredded birria piled in, the consomé alongside for the dunk.

The cheese pull works in any light, and guests tend to describe it the same way: “They have this thing called the Tacazo…”

Why we make it this way

The tortilla is hand-pressed for the Tacazo specifically — slightly thicker than our taco tortillas to hold the structure under the cheese-and-birria weight. The cheese is melted, not just sprinkled — Mama insists on it sealing the inside before the meat goes in. The consomé is the same broth from the Plato de Birria, served in its own bowl.

House rule

Eat the first one without dunking — taste the cheese-and-birria interaction. Dunk the second one.
