The dish
Three tacos al pastor — the Mexican adaptation of the Lebanese shawarma brought to Puebla in the 1920s. At Querida the pastor is chicken, marinated in achiote and pineapple, then folded into a warm tortilla with fresh onion and cilantro.
Why we make it this way
Pastor lives or dies by its marinade. The achiote gives the colour and the earthiness, the pineapple gives the sweetness and tenderises the chicken. Corn or flour tortilla, your choice.
On Querida’s Tuesday
Pastor is on the regular taco menu every day. Unlimited Taco Tuesday (AED 79 + 5% VAT, 11:30 AM – 12 AM, dine-in only) runs its own five fillings — Asada, Tinga, Frijoles Refritos, Chorizo Vegano and Papitas con Huevo.
