The Querida Michelada
Alcohol-free
Built the way we build it at the pass: Corona Zero — Mexican beer, 100% alcohol-free — charged with lime and chilli over ice, with a chilli-salt rim. Spicy, tangy, cold enough to hurt. You'll learn the rim, the ratio, and the order things go in, which is the part everyone gets wrong.
The Burrito
Rolled by hand
A twelve-inch flour tortilla, refried beans, avocado, and the filling you choose — tinga chicken, asada, birria, or the full vegetarian line. Then the fold. A burrito that holds together to the last bite is a technique, not luck, and it's the thing we'll actually drill.
Inside the class
