A hand-rolled Querida burrito, griddle-pressed and sliced, plated with lime, pico de gallo, cotija and a roasted jalapeño — the burrito you'll learn to roll at the masterclass.
The burrito you'll roll — pressed on the griddle, folded to hold to the last bite.

Chef Ernesto

Querida, Al Barsha 1

Ernesto led The Art of Tamales — masa spread by hand, folded, steamed, and eaten together at the table. He's running this one too. Same hands, same pace, no shortcuts.

Mariano Conde building a drink behind the bar, setting a copper tin down beside a glass of ice

Mariano Conde

Guest · Agave Spirit Sommelier

The only Agave Spirit Sommelier in the UAE, and our guest for this one. Mariano takes the drink: the chilli-salt rim, the ratio, the ice, and why the order matters. Everything he builds here is alcohol-free.

What you'll make

The Querida Michelada

Alcohol-free

Built the way we build it at the pass: Corona Zero — Mexican beer, 100% alcohol-free — charged with lime and chilli over ice, with a chilli-salt rim. Spicy, tangy, cold enough to hurt. You'll learn the rim, the ratio, and the order things go in, which is the part everyone gets wrong.

The Burrito

Rolled by hand

A twelve-inch flour tortilla, refried beans, avocado, and the filling you choose — tinga chicken, asada, birria, or the full vegetarian line. Then the fold. A burrito that holds together to the last bite is a technique, not luck, and it's the thing we'll actually drill.

Past masterclasses

At Querida we don't just serve food; we pass down heritage. Every session runs full, and every one ends the same way — everyone eating what they'd just made.

The Art of Tamales

With Chef Ernesto

An interactive session on one of Mexico’s most ancient and cherished culinary rituals. Masa spread by hand, filled, folded and steamed — then eaten together at the table. The same chef leads the August class.

The Mexican Salsas Masterclass

With Chef Carlos Ortiz

Guests were taken through the intricate balance, the techniques and the secrets behind authentic Mexican salsas — verde, arbol, martajada — and left able to build them again at home.

The masterclass runs on the last Thursday of every month. Private sessions for teams, clients and celebrations can be arranged on other dates.
